These are a fuss-free way to bake muffins, butterfly cakes and fairy cakes, you don’t even need a muffin tin to bake them in. Just spread the cases apart on a flat baking tray Wait for your oven to reach the temperature of your sponge mix, then pour the batter directly into the cases and immediately pop the batch straight in to bake. You shouldn’t notice any difference in timings for your usual mix – but please make sure your cakes are baked all th way through.
