We`re nearly there – surely we are nearing the end of Lockdown 3.0?!!!!!
How about a celebratory breakfast as a dedication to the month that once again, felt rather like Groundhog Day on repeat! In true February style how about these easy as 1, 2, 3 lockdown rainbow butterfly pancakes?
If you can`t be doing with making them, pop on our and grab some ready-made, but we promise this recipe is super simple and you`ll never buy a store-bought pancake again!
What You`ll Need:
• 100g Plain Flour (1)
• 2 Eggs (2)
• 300ml Milk (3)
• Oil for the pan
• Choice of toppings – we love lemon and sugar or honey for simple but tasty pancakes!
There`s no need to fill the kids up with Nutella to put a smile on their face – unless you want to of course, in which case go for it! But don`t forget to pick up some extra thick cream to go with yours!
Here`s The Method:
1. Measure your flour into your mixing bowl
2. Crack your eggs into the mixing bowl
3. Measure 300ml milk and add to the bowl
4. Whisk well
5. Get your pan hot and once hot, add a good splash of oil (we use rapeseed oil, but whatever you have is good)
6. Use a ladle or a small measuring cup to collect some pancake mix and pour into your pan
7. Try to get the mixture fairly even, ideally with no holes (particularly if you have super fussy kids!)
8. Once the mixture looks like it`s set, use your spatula to loosen the pancake around the circumference of the pan
9. Feeling brave? Get the spatula under the pancake and flip (you don`t have to toss it unless you really want to!)
10. Add to your stack and keep warm in a plate in the oven – aim for no more than 100 degrees Celsius so as not to cook – you just want a sense of warmth
11. Add the fillings to each pancakes, roll and place on your plate ready to serve
12. Add your mini rainbow butterflies, by popping them out of the template, pinch to fold and place on your pancake ready to serve!
