Transform Your Easy Gluten Free Baking into a Masterpiece For Any Celebration
Finding easy gluten free baking that also tastes great, can be a challenge! Whilst there are recipes widely available for the choosing, achieving the right texture and great flavour, can be where the compromise lies – we know – we have tried A LOT of recipes!
Our Go-To Easy Gluten Free Baking Hack
This quick, easy and tasty bake from All Recipes is a great base for any celebration cake and is always a hit with the kids. Not bad when you consider that one of the main ingredients is chickpeas! Furthermore, you don’t need any fancy kitchen equipment to pull this together. You just need about 30 minutes preparation time, 30 minutes baking time, a stick blender, a bowl and a pan or a microwave.
What You’ll Need:
If you have some store cupboard essentials, you may not even need to leave the house to get this cake made. Check out the ingredients list:
1 tin chickpeas (yes – we said chickpeas!)
4 eggs
150g golden granulated sugar
250g dark chocolate
1 teaspoon baking powder (gluten free)
1 tub of ready to go buttercream icing
Here’s The Method:
1. Break up the chocolate and melt either in a bain-marie (boiling water in a pan with a bowl over the top) or in the microwave.
2. Open the tin of chickpeas, drain and empty into the mixing bowl.
3. Measure out 150g of golden granulated sugar and add to the bowl.
4. Measure out 1 teaspoon of baking powder and add to the bowl.
5. Crack your 4 eggs into the bowl.
6. Using a stick blender (or regular blender) mix until smooth.
7. Once smooth, stir in the melted chocolate until the whole mixture is well combined.
8. Turn out the mixture into your baking tin of choice. You can go for a small loaf, a standard round tin, or even muffin style cupcakes! We chose a sponge tin case and two heart tins – it is valentines after all!
9. Bake at 180 degrees Celsius for 30 minutes, or until the knife is clean when you test it.
10. Turn out onto cooling rack.
11. Once cooled, grab your ready to go icing and either spoon it on or pipe it on. You can do this by using a baking sheet as a quick and easy hack – follow this link!
12. Open your CDA Products decorations of choice, gently press out and place on the cake – ta daa!

We used the greaseproof paper icing bag hack to get our ready made icing looking great, and then added our cupid love heart cake toppers for a great end result!
Part of home schooling the kids of CDA Products this week, has included getting the kids involved in our quick and easy bake, complete with cake decorating! We think we’ve covered home tech and arts and crafts in one exciting hit, by letting the kids cover their own heart cakes in our beautiful pink sugar free sprinkles – and what a fab job they did!
